  Hello, in order to fully customise the theme, I need this theme in a downloadable zipped file? I’ve already purchased it on the wordpress site.

  If you are wanting to use the Mellow theme on a self hosted WordPress site, you will need to purchase it from ThemeTrust.com. http://themetrust.com/themes/mellow/

  You should be able to get a refund from WordPress.com.
