How to create a Category Index with featured image in thumbnail or small size?

Previously, I’d been creating Category Indexes of my past posts manually. As you can imagine, this is time-consuming, and the final product isn’t so aesthetically-pleasing, as you can see here:
I happened upon a suggestion in another WordPress forum where a member suggested using this code to create automated Category Indexes.
[display-posts taxonomy="category" tax_term="Collages" posts_per_page="-99999999" order="ASC" orderby="title"]
The code worked like a charm, but I would also like the Featured Image to appear as a thumbnail beside the title.
Is there any code I can add to achieve this?
If not, do you have any suggestions of how I can make an automatic Category Index with:
a. the blog post title
b. the featured image (thumbnail/small size)

The theme already comes with a category template. You can add a category to your menu and it will display as you can see in our demo: https://photographerdemo.wordpress.com/category/featured/.
It displays a thumbnail of the featured image of the post and links to it when selected. It doesn’t however display the post title. If you wanted to display the title this would require editing the template which is not possible on WordPress.com.
