In the contact info widget I cant get it to show my phone number and hours; it shows the default.
The blog I need help with is payments-blogger.com.

It shows the phone number now, so this might have been just a caching issue and it is refreshed now.
Please note that Contact Info widget is not part of the Maxwell theme, but the general WordPress.com platform, so I’m not an expert here. You can find all available settings and how to configure the Contact Info widget on https://en.support.wordpress.com/widgets/contact-info/
